The ingredients needed to make Navratan korma:

  1. {Prepare 1/4 cup of diced carrot.
  2. {Get 1/4 cup of diced potato.
  3. {Make ready 1/4 cup of diced green beans.
  4. {Prepare 1/4 cup of green peas kernels.
  5. {Get 1/2 cup of cauliflower florets.
  6. {Prepare 1/4 cup of diced green bell pepper.
  7. {Prepare 2 of medium sized onion.
  8. {Get 1 spoon of Ginger-garlic paste.
  9. {Prepare 6 of cashew nuts.
  10. {Get 6 of almonds.
  11. {Take 50 gm of poppy seeds.
  12. {Get 50 gm of sour yogurt.
  13. {Get 100 gm of cottage cheese/ paneer cubes.
  14. {Take 2 tablespoon of heavy cream.
  15. {Get 3 of green chillies.
  16. {Get 4-5 of whole peppercorns.
  17. {Take 1 of black cardamom.
  18. {Get 1 inch of cinnamon stick.
  19. {Make ready 2-3 of green cardamom.
  20. {Prepare 1 of bayleaf.
  21. {Make ready 2-3 of cloves.
  22. {Take 1/2 cup of cooking oil/ghee.
  23. {Make ready 1/2 spoon of garam masala.
  24. {Prepare 2 of stems of coriander leaves for garnishing.
  25. {Take to taste of Salt.

Instructions to make Navratan korma:

  1. First in a deep vessel add some water & salt then boil all the vegetables except green bell pepper..
  2. Now cut the onions into cubes & in another saucepan add 2 cup of water then boil the onion cubes untill they become soft & translucent..
  3. Once the onion is done switched off the flame, drained out the excess water & cool it down a bit then make a fine paste adding 1 green chilli with it..
  4. Soak almond,cashew & poppy seeds in warm water for 30 minutes then peel off the skin of almonds & make a fine paste out of it..
  5. Now in a pan lightly fry the diced green bell pepper then slightly fry the paneer cubes & keep those aside..
  6. In the same pan heat up some more ghee/oil & add all the whole spices(bay leaf,peppercorns,black cardamom, green cardamoms, cinnamon, cloves) & fry them until crackle & the aroma comes out..
  7. After that add the onion paste into the oil & saute for couple of minutes. Then add Ginger-garlic paste & saute for few minutes.
  8. Now beat the yogurt & transfer into the pan.Add the nut-poppy seeds paste right after that & stir well.
  9. Now stir & saute the whole mixture well so that it doesn't stuck to the bottom of the pan..
  10. Next transfer all the boiled vegetables along with the water in which it has been boiled (vegetable stock) & stir well then cover it up & cook for 5-7 minutes..
  11. Now add previously fried bell peppers, paneer cubes & 2 tablespoon of heavy cream. After that adjust the salt & let this cook for another 2-3 minutes.
  12. Finally add garam masala,few drops of ghee & 2 slitted green chillies & switched off the flame..
  13. Sprinkle some chopped corriandar leaves over it & Serve hot with rice or chapatis..
